Happy Birthday Baby Girl

A year ago today I became a mother of 2 .

Our gang of 3 became 4.

Those first few weeks passed in a blur and before we know it life as a family of 3 was a distant memory as Baby Essex fitted perfectly into our already perfect lives.

It would be impossible to put into words all the joy my baby girl has bought me over the past 12 months.  She means the world to me and more.  Her relationship with her daddy melts my heart, and the bond she shares with her big sister is one that could never be broken.

Sometimes I had to stop and pinch myself that this really is my life, I will never stop being grateful for how lucky I am.

So on this momentous day, the day I am no longer a mother of a baby (and probably never will be again), I am wishing my gentle, funny, heart stopping beautiful baby girl a first birthday to never forget.

I love you to the moon and back little legs xxx

The Little Lady does love a sleepover.  She and her sister spend at least 2 weekends a month with their grandparents for some quality time with them (and some quality time at home for the The Essex Husband and I) and as a family we travel to visit and stay with family quite a lot so she is often away from her own bed.  She has always been a wonderful sleeper and taken to ‘strange’ beds straight away but I have always thought that it would be nice to be able to take a bed with us that was ‘hers’ so she could have her home comforts even when far away.

In step the Ready Bed - A clever sleepover solution that consists of a portable bed with soft cosy cover and integral bedhead for extra comfort and safety and a handy pocket to keep your favourite story book safe at night.  All the covers can be removed and washed and the bed also folds down into its own carry bag making it easy to transport from one place to another.

I love the bed.  The pump that was included was easy to use (even the 3yr old could manage it) and once inflated the bed was sturdy and lasted a whole day and night of being jumped in and out of without losing one bit of firmness.  The only problem I have with this bed is that I only have one (this will cause some battles between the girls I’m sure, so we have kindly asked Father christmas to bring us another one).  Really though it doesn’t matter what I thought of the bed, it all about what the Little Lady thought of it….and well I think this picture speaks for itself.

Baked feta and cous-cous salad

This quick and easy dish is perfect for a lunch time treat.  I love having this baked feta and cous-cous salad on a fresh autumnal day.  The cous-cous and feta are served warm so perfect fuel to beat off the winter chill.

 

Preheat Oven to 180

Slice your feta, place on a large piece of foil, and top with chili flakes and sliced garlic

Fold edges of foil up to make a parcel ready for the oven – cook for 10-15 mins

While the feta is cooking make the cous-cous using your vegetable stock in lieu of water as per the packet instructions

Chop your radishes, spring onion and celery. Mix with your cous-cous.

Once the feta is out of the oven open the foil, remove the sliced garlic and allow to stand for a few minutes

Place your cous-cous salad on a plate and top with your feta – then enjoy!
