Christmas means many things to many people. A time to reflect, to worship, to be thankful or maybe a time to celebrate, to give and to receive.

For me its a chance to see loved ones, to take some time out to enjoy myself, to spoil my nearest and dearest with love, presents and food….and, without doubt, a time to party. And these mince-pie cinnamon sticks with Baileys chili chocolate sauce are the perfect complement to a Christmas cocktail or two.

Take your filo pastry out and lay flat. It dries quickly so work fast and only get out the sheet you are using.

Cut pastry into 4 long strips and the cut each strip in half so you have eight small oblongs.

Spray or brush each oblong with oil and then sprinkle generously with cinnamon.

Turn each sheet over so it is cinnamon side down.

Take a small piece of mincemeat and roll in your hands to form a thin sausage shape.

Place at one end of the filo oblong and roll tightly to form a stick. Repeat for each piece.

Place on baking tray and then repeat process for next large filo pastry sheet.

Once all 4 large sheets have been used place all 36 sticks in the oven at 180 C/ Gas Mark 4 for about 15 minutes until golden and crisp.

While they are baking bring a large pan of water to the boil.

Put the chocolate in a heat proof bowl and place over the boiling water to melt.

Once melted add the chili powder and Baileys cream and stir well until combined and warm.

When ready to serve place the chocolate sauce in a small dish, tie the sticks in bundles of 5 and dust lightly with icing sugar for a snow like finish.

I find them best served warm, however The Mince Pie Cinnamon Sticks with Baileys Chili Chocolate Sauce can also be served cold.
